...St. Patties Day...


For the past week Trey has been super sick with a double ear infection and border line RSV.  
So when St. Patricks Day came around I thought for sure it would be a total waste of a fun Holiday. Thankfully the anti-biotics kicked in and Trey was back to normal just in time for St. Paties Day. 

We started off the day with the usual green pancake breakfast. 


and the leprechauns came and brought the boys all sorts of fun green things to wear for the day.


That morning we headed to the church for a fun St. Patricks Day playgroup. 
They made rainbows out of paper plates and fruit loops and went on a scavenger hunt for the pot o' gold at the end of the rainbow.



Trey is at the age where he grabs everything in site and puts everything in his mouth.

 I love how festive everyone was, thats a whole lot of green!


After lunch with Dad, I decided to make some cupcakes using a new recipe I found online.


If you think they look gross its because they were.
The frosting was all wrong and the cake was kind of weird. I absolutely love cupcakes and wish so bad that I could make them like the pros but it looks like from now on I will be sticking with the box. But if anyone has some good tips, I would love to hear them. 

The rest of the day was spent playing games and relaxing. It was a good day!

Elyse - I have a GREAT recipe for Cupcakes or a cake! Me and my mom went to a cake decorating class a while ago and this is the recipe she had us use for the cake! Its super moist and really dense and not to mention YUMMY!! :) http://www.food.com/recipe/white-almond-sour-cream-wedding-cake-69630 You can half the recipe too! I always half it cuz it makes soooo many cupcakes! :)

The frosting we learned in our cake class as well and it is really good too! :) It is a little fatty though as it has shortning in it, but it is super yummy though! :)

Buttercream icing-
1-cup while veg. shortening.
1-teaspoon Vanilla,Almond or butter (we used a combination of all of the flavors just add less of each)
7-8 reaspoons milk or water
1 lb. powdered sugar
1-tablespoon meringue powder (you can buy this at Wal-mart by the cake decorating things Wilton brand or you can also go to any baking store and get some and it is usually cheaper)
pinch of salt (optional)

Cream shortening, flavoring & water. add dry ingredients and mix on medium speed until all ingredientts have been thoroughly mixed together. blend an additional minuet or so until creamy (makes 2 &1/2 cups which is perfect for cupcakes when the cake recipie is halved.) Also add water as needed, I always find I am adding more water then it says. But make sure it is stiff enough to use a frosting tip to frost your cupcakes! :) I hope you like the recipe as much as we do! :)
